Errors should be output to stderr, and it isn't required that you have
even one -v specified to see errors. You should be able to redirect
stderr (file-handle 2) like this:

rsync -av src/ dest/ 2>/tmp/rsync-$$.txt

That should give you the errors in whatever file you like.
