Yes - it's quite possible to do this.
I do so frequently when testing new versions of the agent.
(Normally listening on different ports, rather than different interfaces)

Try running

snmpd 127.0.0.1
snmpd `hostname`

That should start two separate agents - one listening on the loopback
interface, and one on the main network interface.

You could also specify the local address explicitly, and/or give a
particular port to listen on:

snmpf 10.0.0.1:161
