What I want:
Only unread news messages
Sorted according to subject
Threaded
Threads collapsed
What I get:
Most of above. Some groups behave as required, while others seem to
loose my settings in the "View" ...

What I get:
Most of above. Some groups behave as required, while others seem to
loose my settings in the "View" menu.
I set
View > Sort by > Subject/Ascending/Threaded
View > Messages > Unread
View > Threads > Unread
Then press "\" to collapse threads and all unread items disappear from
screen. I need to move away from newsgroup and back again to make them
visible.
Issue #2 - Newsgroup folders information
When I first log in to a news server, I get the expected result: the
Newsgroup name is emboldened and the number of unread posts for that
newsgroup is shown.
While reading through newsgroups, this status information disappears
from newsgroups lower down my list (although it returns when I click on
the newsgroup name).
Any advice about these two issues?

Just wanted to point out that, when you set View | Threads to
'Unread', the View | Messages setting goes automatically back to
'All', because it doesn't apply any more: the view becomes
threaded, as opposed to an unstructured list of messages. Apart
from that, I couldn't reproduce your issues, sorry (but then
again, I subscribe to only a few groups, all of them in the same
server).
