    There are various Windows-based programs that use established algorithms
    for "removing" (really "suppressing") the vocals on a music track
    leaving only the instruments while maintaining high audio fidelity.

    Is there any Linux open source software project at this time which has
    been established for this purpose?

    audacity can do this, but not in real time.

    No, it doesn't have to be in real time; just on a recorded music track.
